The Spring Festival is a joyful festival that celebrates the beginning of a new year on the traditional Lunisolar Chinese calendar. Today many families gather together for parties and celebrations. The night before the Lunar New Year, there is a grand dinner with specialty meats as the main course as an offering for the New Year, similar to the feasts on Thanksgiving and Christmas. In northern China, people are used to preparing and enjoying dumplings or JIAOZI in the middle of the night because the dumplings are shaped like the Chinese ingot, which symbolizes wealth. In the South, there is a tradition of making glutinous rice cakes and sharing them with family and friends as gifts in the days to come. Some families head to local temples hours before midnight to light the first incense of the year and pray for success. In the past, firecrackers were set off to ward off evil spirits. The tradition of staying up late on Chinese New Year's Eve is known as SHOUSUI. It is still practiced and believed to add to parental longevity.
